Beetroot Rice
Pimp your rice with the colour of beetroot!
Beetroot rice is a way to enjoy and use up beetroot, full of colour and flavour. Enjoy simple with a side of vegetables, with a curry or dhal. You will find that even the kids will enjoy it. Great way to get those nutrients into your rice dishes.

Beetroot Rice

Ingredients
- 1/2 cup of medium grain rice
- 1.5 cups of water
- 1 teaspoon of coconut oil
- 1/2 teaspoon cumin seeds
- 1 small beetroot (grated)
- 1/4 teaspoon salt
- Fresh coriander to garnish
Instructions
- Rinse the rice until the water becomes clear. Add the rinsed rice with 1.5 cups of water and bring to a boil. Then reduce the heat to medium-low, and simmer slowly for 15 minutes until water is absorbed and rice is fluffy. Remove from the heat and set aside, still covered, for 5 minutes.
- Heat the oil in a sauté pan on medium heat. Add the cumin seeds, and cook for 30 seconds. Add grated beetroot and cook for 1-2 minutes stirring constantly to make sure it doesn’t stick. Add the cooked rice, and salt and stir well. Serve warm, with dal and or any side of your choice. Garnish with fresh coriander.
