Spiced Tahini Almond Cookies

These spiced tahini cookies are great as a snack or for a sweet craving while been nourishing at the same time.

Tahini Spiced Almond Cookies
Serves: 12-15

Ingredients
- 1.5 cups (225g) almond meal
- 1/2 cup oat flour
- 3/4 cup (200g) tahini
- 2 tbsp ghee
- 1/4 cup (130ml) maple syrup
- 1 teaspoon cinnamon powder
- 1/2 teaspoon cardamom powder
- 1/2 teaspoon sea salt flakes
- 1 teaspoons vanilla extract
- garnish with sesame seeds or pecans/nut of choice
Instructions
- Preheat the oven to 170 degrees, and also line a tray with baking paper
- Place tahini, maple syrup, ghee, spices, salt, and vanilla in a medium heavy-bottomed saucepan on medium heat. Heat for a few minutes, stirring constantly until smooth and blended. Remove from heat and allow to cool for 10-15 minutes.
- Add almond meal & oat flour to the spiced tahini mixture once cooled and mix until a rough dough forms.
- Roll 2 tablespoons worth of the dough in the palm of your hands into a ball. Place on the prepared lined tray and flatten slightly with your fingers.
- Place seeds or seeds on top of the cookie discs in the center. Bake in the preheated oven for approximately 10 minutes. Switch off the oven and let the cookies brown slightly in the hot oven for another 5 minutes before removing.
- Cool the cookies on some wire racks. Store in air-tight containers at room temperature for up to a week.
